Recipe type: Appetizer
Cuisine: Indian
Serves: 12 fritters
  • 1 cup Urad Dal (pre soaked)
  • ½ cup spinach puree
  • 2 cloves garlic
  • 1 tsp grated ginger
  • ¼ tsp fruit salt
  • 1 tsp cumin seeds
  • 1 tsp dry pomegranate powder(anardana)
  • Pinch of asafoetida
  • ½ tsp salt
  • ¼ tsp red chili
  • 3 tbsp water
  1. Grind pre soaked urad dal with garlic cloves and ginger to get smooth consistency.
  2. Add spinach puree to the dal batter and mix.
  3. Add fruit salt, mix and let the batter rest for 2 minutes.
  4. Add cumin seeds, anardana, asafoetida, salt, red chili and water. Mix the batter and let it rest.
  5. Place Ebelskiver Pan on medium low heat. When the pan is hot enough spray oil.
  6. Fill each cup with dal batter slightly below the rim.
  7. In about 1½ minutes, thin crusts will form on the bottom of the lentil balls(centers will still be wet), using two wooden skewers gently flip the lentil balls, now about half the cooked portion is above the cup rim and the uncooked batter will flow down in the cup.
  8. Cook for two more minutes until the bottom of the lentil ball crust is firm enough to pierce.
  9. Pierce the skewer into the lentil ball and take it out-- it should come out clean.
  10. Lift cooked lentil balls out of the pan with skewers and serve hot with your choice of dipping sauce.
  11. Repeat to cook the remaining batter.
1. Pre soak the urad dal for one hour
2. Its important to spray all sections of the Ebelskiver pan with oil.
3. Use wooden skewers to flip as they do not scratch the pan surface.
4. If you notice the fritters are starting to get too brown reduce the heat to low
5.Cook the fritters until the center is fully cooked.
