Healthy Tuna Salad is easy to make, delicious, protein-packed salad. Tuna is combined with salad greens, black beans, fresh tomatoes, onions, avocado, and pomegranate. The salad is topped with grated cheddar cheese and creamy avocado cilantro dressing.

  • For Tuna Salad
  • 2 4-ounce cans of tuna in water
  • 1 cup green salad mix
  • ¼ cup black beans, (boiled or canned, drain the liquid)
  • ¼ cup finely chopped onions
  • ¼ cup finely chopped tomatoes
  • ¼ cup pomegranate seeds
  • ½ ripe avocado, peeled, pitted and diced
  • ½ cup grated sharp cheddar cheese
  • For Avocado Cilantro Dressing
  • ½ ripe avocado, peeled, pitted and diced
  • ½ cup loosely packed cilantro leaves, stem removed
  • ½ cup plain Greek yogurt
  • 1 tbsp freshly squeezed lime juice
  • ½ tsp salt
  • ¼ tsp pepper
  • 4 tbsp water
  1. To make avocado cilantro dressing, combine avocado, cilantro, yogurt, lime juice, salt, pepper and water in the blender.
  2. Blend the ingredients until you get a smooth, creamy consistency. Keep the dressing in the refrigerator to cool.
  3. To assemble the salad - take a bowl and flake the tuna.
  4. In the salad serving bowl add tuna. Gently add salad greens, black beans, tomatoes, onions, pomegranate, and avocado.
  5. Sprinkle grated cheddar cheese. Pour the dressing on top of the salad and gently mix to combine.
  6. Serve tuna salad immediately with tortilla chips.
1. Avocado Cilantro dressing tastes great if cooled in the refrigerator before serving.
2. You can pressure cook your beans or use canned and drained black beans.
3. Always check the mercury level on the Tuna cans before buying.
