Instant Pot Chicken Tikka Masala is easy to make, delicious Indian dinner recipe. This is a simple recipe you can make with everyday ingredients from the pantry. This recipe can be served as quick, delicious dinner for busy weeknights. This is a healthy recipe made with no fattening agents, gravy is made thick with cashew and yogurt paste.

  1. Marinate chicken pieces in the items listed under marination overnight or for 6 hours.
  2. Switch Instant Pot to saute mode, add 1 tbsp oil and then add cumin seeds, bay leaves and green cardamoms to the pan and stir fry
  3. After 2 minutes, add marinated chicken pieces and stir fry till chicken pieces are well cooked.
  4. Press the "keep warm/cancel" button and take out the chicken pieces. Leave the whole spices in the pot.
  5. Switch on the "saute" button and add onion puree. Fry the onion puree in the leftover chicken juice and spices.
  6. Saute until golden brown, then add tomato puree. Cook for 3-4 minutes till puree reduces to half and has mixed evenly with onion puree. Now add tomato paste and mix.
  7. Now add salt, coriander powder, paprika and 1 tbsp oil. Mix the spices in the puree.
  8. In a blender blend cashews and yogurt together and add it to the pot.
  9. Stir and mix the ingredients and let it cook for 3-4 minutes
  10. Add the cooked chicken pieces and 1 cup water to the mixture.
  11. Mix well, close the lid and cancel saute mode.
  12. Select Manual mode for 5 minutes.
  13. When done , open the lid and add chopped capsicum and onion pieces.
  14. Sprinkle half fenugreek powder on top and mix, add rest of the powder on top as garnish.
1. Cook the onion puree well till its golden brown as it gives great flavor to the dish
2. I have used store bought organic tomato puree and organic tomato paste as it gives a thick consistency
3. Blending cashews and yogurt adds as a great thickening agent for the gravy
