I have always enjoyed cooking even after a long busy day. My energy levels are not the same during a hectic weekday as compared to a relaxed weekend. On busy days, I just want dinner to be ready in minutes. These past few weeks have been busy. Past weeks with limited time to cook. I have been experimented with Pot in Pot cooking(PIP) recipes in Instant Pot. My focus was to cook simple, healthy meals which don’t need elaborate prep and cooking time. PIP method just made things easy and was a huge time saver. I plan to post more recipes on the blog using PIP method in Instant Pot. If you are interested in PIP cooking invest in some stainless steel inserts which fit in Instant Pot. Ingredients
  • For Quinoa Pilaf
  • ½ inch ginger grated
  • 3 cloves minced garlic
  • ½ cup chopped organic green beans
  • ½ cup organic frozen green peas
  • ½ cup organic frozen corn kernels
  • ½ cup finely chopped organic carrots
  • 1 small onion finely chopped
  • 1 cup organic quinoa
  • 1 tbsp avacado oil
  • 2 cups water
  • Spices for Quinoa Pilal
  • 1 tsp cumin seeds
  • 2 small bay leaves
  • 4 cloves
  • For Moong Dal
  • 1 cup Moong Dal
  • pinch ofasafoetida
  • ½ tsp turmeric powder
  • 2 cloves of garlic chopped
  • 1 tsp salt
  • 2½ cup water
  • Moong Dal seasoning
  • 1 tbsp ghee
  • ½ cup chopped onion
  • ½ cup chopped tomatoes
  • 5 garlic cloves chopped
  • 1 tsp cumin seeds
  • 1 tspnigella seeds
  • 1 dry red chilli
  • ½ tsp red chilli powder
  • 1 tspcoriander powder
  • 1 tsp garam masala
Instructions
  1. For Quinoa Pilaf
  2. Switch Instant Pot on saute mode. In the main pot add oil when its hot add cumin seeds. When the seeds start to splutter add bay leaves and cloves. Now add garlic cloves and ginger. Fry them.
  3. Add onions and cook till they turn translucent in color. Add beans,peas, corn and carrots. Keep frying them for next two to three minutes.
  4. Add quinoa and mix well with the vegetables and add two cups of water.
  5. For Moong Dal
  6. Now put trivet in the main pot and put the steel insert on top. In the insert add moong dal, asafoetida, turmeric, salt,garlic cloves and two and half cups water.
  7. Now close the Instant Pot lid, cancel saute mode and select Rice mode.
  8. When the Instant Pot beeps quinoa and dal are both cooked. Let the pressure release naturally.
  9. In a pan add ghee when it is warm add add cumin seeds,nigella seeds when the seeds splutter. Add garlic cloves and dry red chili.
  10. After few minutes add onions and fry till translucent. Now add tomatoes when they are cooked add red chili powder,coriander powder and garam masala. Add this seasoning to cooked dal.
  11. Serve quinoa pilaf, moon dal with side of salad and lemon pickle.
Notes
1. You can adjust dal consistency by adding more water to make it thin or use saute mode to dry excess water.
